Healthy Potato Tikkis
Ingredients:1) boiled potatoes - 4 medium sized potatoes ,
2) brown bread crumbs - 2 breads ,
3) egg bhurji - 1 egg ,
4) chopped onion - 1 medium sized onion ,
5) chopped spring onions - 1/4th cup ,
6) chopped green chillies - 4 ,
7) chopped coriander leaves - 1/4th cup ,
8 ) salt - 1 tsp ,
9) red chili powder - 1 tsp ,
10) jeera powder - 1 tsp ,
11) dhania powder - 1 tsp ,
12) garam masala powder - 1 tsp ,
13) black pepper powder - 1 tsp ,
14) kishmish/raisins - 1/4th cup ,
15) corn flour - 1 tspn for binding ,
16) onion rings , coriander strands , pickle , tomato sauce , coriander-mint chutney , red chilli chutney for garnishing
17) oil (white oil / olive oil ) for brushing the tray before baking ... Method:
1) Take a mixing bowl & add the boiled potatoes , egg bhurji , chopped onion , spring onions , green chillies , coriander leaves , salt , red chilli powder , jeera, dhania , garam masala powder , black pepper powder , corn flour , kishmish , mix everything very well to form a dough ,
2) Rub a bit of oil in between your palm & make small tikkis from the dough ,
3) Cover the tikkis with brown bread crumbs ,
4 ) Heat a non stick pan/tawa,brush a bit of oil & shallow fry the tikkis on both sides , serve hot with the chutneys , pickle & sauce & garnish with some onion rings & fresh coriander strands ...
Please Note:
1) Onions can be fried a bit before adding to the mixture ,
2) Instead of egg bhurji , boiled eggs can be added/paneer/boiled & shredded chicken/boiled & shredded nutrela granules can also be added ,
3) Ginger-garlic paste can also be added ,
5) Instead of corn flour , rice flour , maida , arrowroot can also be used in the same quantity as a binding agent ,
4) If using a microwave then brush the tray with oil & bake them in a pre heated oven at 180C for 12-15 mins ,
5) Add a small cheddar /mozzarella cheese cube inside the Tikkis & you can rename the dish as "baked potato cheese burst tikkis" (I too wanted to add it but couldn't get hold of any in my place,
6) You can also coat the tikkis in maida then with egg & finally with bread crumbs & then deep fry them for turning them into cutlets/chops ,
7) Sprinkle chaat masala on top of you want,
8 ) Instead of bread crumbs,oats can also be used in this recipe ... thank you ...
